Here's my simple tomato marinara sauce which also happens to be a great way to use up all the super ripe garden tomatoes. The beauty of this recipe is its flexibility. Use any medium or large tomato (I prefer San Marzano or plum tomatoes) and use as many tomatoes as you like. Once the tomatoes are nice and ripe, they are good to go. In this recipe, I roasted the tomatoes before removing their peels. While this step adds depth of flavor, save time by skipping the roasting and instead, blanch whole tomatoes for 30 - 60 seconds to loosen their skins before peeling. Save even more time by using canned whole tomatoes.

10 - 20 Ripe tomatoes, roasted or blanched with skins removed (or 28-ounce can whole tomatoes with juice)
2 tbsp extra-virgin olive oil
1/2 onion, finely diced
1/2 tsp kosher salt
1/8 tsp red chili flakes
1/2 tsp Italian spice blend (1/8 tsp dried parsley, 1/8tsp dried oregano, 1/8 tsp basil, 1/8 tsp garlic powder)
3 garlic cloves, minced
3 tbsp tomato paste
1/2 cup red wine
1 tbsp fresh basil (approximately 6 leaves), roughly chopped or torn into small pieces
1/4 cup parmesan cheese, freshly grated
Salt and freshly cracked pepper, to taste
Preheat oven to 400°F
Score the skin on one side of each tomato with the tip of a knife
Drizzle with olive oil
Roast in oven, 15 minutes
Remove from oven and allow to cool
When cooled, peel away skins from tomatoes, reserve the juice and pulp and set aside
Heat olive oil over medium heat
Add onion, red chili flakes and a pinch of salt and sauté until onions are translucent
Stir in herbs and garlic and cook until fragrant, about 30 seconds
Stir in tomato paste
Increase heat to medium-high and add red wine
Simmer until wine reduces and sauce begins to thicken
Add tomatoes and basil
Bring to a boil, then reduce heat to simmer
Add parmesan and simmer for 30 minutes
Taste and adjust seasoning with an extra sprinkle of parmesan cheese, a pinch of salt and freshly cracked black pepper
Serve with your favorite pasta or with any recipe that calls for tomato marinara sauce. This sauce is perfect for Roasted Eggplant, Potato & Mozzarella and Mama's Chicken Cacciatore
