Hi, I'm Christine, the founder of Curious Artichoke - a company fueled by curiosity, science, and a love for delicious, fresh meals.
As an Italian-American, my love for food started early. I was lucky to grow up surrounded by delicious Mediterranean flavors. You could count on my grandmothers and of course, my mom, to create the most amazing Italian dishes at just about every meal. Since then, I have been on a persistent quest to dig further and uncover ways to optimize nutrition through delicious food.
With degrees in both Biochemistry and Nutrition, I'm fascinated by metabolism and how food works in the body. From bioavailability, nutrient absorption and the diversity of the microbiome to the underlying biochemical signaling pathways that shape our overall wellbeing.
But, how does all of that translate into everyday delicious meals? Especially when so many of us are pressed for time. Having spent over 15 years in corporate healthcare, easily working 10+ hour days, healthy meals were certainly a challenge.
That's where Curious Artichoke comes in. It is a place where curiosity meets creativity. A space to discover recipes that are satisfying, flavorful, fresh and nutritious. With inspiration from all over the world, and from within our bodies, Curious Artichoke is on a mission to develop simple recipes and provide science-backed nutrition tips that help nourish the body and fuel enjoyment in the journey of healthy eating.
