Revitalizing, no-fuss gazpacho that's quick, nutritious and delicious. With electrolytes for quick hydration, antioxidants to combat the harmful effects of UV radiation, protein and fiber to boost satiety and improve digestion, this refreshing cold soup is the perfect remedy for the summer heat!
Time saving tip: Add more coconut water and a few cubes of ice to turn this gazpacho into a smoothie that you can drink on the go!
1 large cucumber cut into large chunks
1/4 medium cantaloupe, skin removed and cut into large chunks
1/2 large avocado, scooped out of the shell
1 large date, cut in half
1/2 cup coconut water
2tbsp plain Greek yogurt
2tbsp freshly squeezed lemon juice (juice of 1 lemon)
5 leaves fresh basil
5 leaves fresh mint
Pinch of salt
1tbsp extra-virgin olive oil
Puree all ingredients except olive oil until well combined into a smoothie-type of consistency
Taste and adjust seasoning, if necessary
Replace the lid and drizzle olive oil into the blender while on low speed until well incorporated

Pour the gazpacho into small ramekins or bowls and refrigerate for at least 30 minutes
When ready to serve, add a drizzle of olive oil, a few flakes of sea salt and sprig of mint
