Sea Beans are like the green bean's salty seaside cousin due to their halophytic nature. Personally, I love the taste of the sea so eating these beans raw is a treat. Of course, that's not for everyone so try this easy way to prepare these nutrient packed veggies. When lightly sauteed with garlic, the brininess of the sea beans disperses to season the entire dish naturally. Rounding out the dish with shallots and extra-virgin olive oil delivers a flavorful accompaniment for grilled fish, seafood, steak or chicken. Add a little squeeze of lemon and you won't be disappointed!
1 cup sea beans, rinsed and picked through to remove any sticks
3 cloves garlic, finely diced
1 medium shallot, peeled and sliced thin
2 tbsp extra-virgin olive oil
Sauté the Shallots and Garlic
Heat an 8 or 10 inch iron skillet (or any frying pan you prefer) over medium heat
Add the extra-virgin olive oil
When the oil begins to shimmer, add the shallots and saute until translucent and starting to brown
Add the garlic, stir constantly for 30 seconds (taking care not to burn the garlic)
Sauté the Sea Beans
Add the Sea Beans to the pan and sauté, stirring periodically for approximate 1-2 minutes
There's no need to add additional salt when cooking with Sea Beans but give it a taste and judge for yourself.
Serve with grilled steaks, chicken or salmon and roasted potatoes.
Nutritionally, sea beans pack a punch with protein (10g per half cup), calcium, vitamins, minerals, fiber, antioxidants and omega-3 fatty acids! Sea beans are a good source of Vitamin A (in the form of flavonoids and carotenoids, provitamin A, which is then converted in the body to vitamin A to support vision, immunity and cellular growth and differentiation). Sea beans also contain vitamin C, potassium, magnesium, iron and iodine. Notably, sea beans contain a phytochemical called Trans-ferulic Acid, a powerful antioxidant with anti-inflammatory and antibacterial properties. Trans-ferulic Acid supports skin health by protecting cells from damage against UV radiation and pollution.
