If you love waffles as much as I do then give this elevated, nutrient-packed version a try and you will be hooked! The addition of Greek yogurt and walnuts adds a protein boost while the banana adds fiber and potassium.
These protein waffles are great served hot off the waffle iron topped with banana, walnuts and lemon zest. But, they also double as quick healthy snacks. Simply freeze leftover in grab-and-go portions, then pop into the toaster when in need of an energy boost.
Ingredients
For the waffles
2 eggs
1 3/4 cups almond milk
1/2 cup Greek yogurt
1/2 banana, partially mashed with a few larger bits remaining
1 tbsp agave
1 tsp vanilla extract
2 cups all-purpose flour
Nutrition tip: Make them gluten free, and just as delicious, swapping regular wheat flour with cup-for-cup gluten free flour
1/4 cup walnuts, ground (if you don't have ground walnuts on hand, pulse walnuts in the food processor)
1 1/2 tbsp baking powder
1/2 tsp kosher salt
1tsp lemon zest
For the topping
1 banana, thinly sliced
1/4 cup chopped walnuts, toasted
1 tsp lemon zest
1 tbsp maple syrup (optional)
Preparation
Combine the wet batter ingredients:
In a medium bowl, whisk together the eggs, yogurt, mashed banana, agave and vanilla extract
Combine the dry batter ingredients
In a separate medium bowl combine flour, baking powder, salt and lemon zest
Combine batter ingredients
Whisk 1/3 of the dry ingredients into the wet mixture
Repeat until all dry ingredients are incorporated and the batter is smooth (leaving some of the banana bits intact)
Preheat waffle iron
When waffle iron is heated, add 1cup batter and cook until waffles are golden brown
Repeat with the remaining batter
Top with a few slices of banana, toasted walnuts, a pinch of lemon zest and a drizzle of maple syrup (if using).
