This is a simple recipe to achieve consistently fluffy baked potatoes with delicious crispy skin. Be sure to select Russet potatoes for the fluffiest interior. This two step baking method comes in handy when cooking multiple dishes. After the first baking step, the potatoes can be set aside for up to an hour then placed back in the oven for the final 10 minute crisping stage, so the potatoes are ready when you need them.
Ingredients
Medium Russet potatoes, as many potatoes as you need, rinsed and patted dry
1 tsp extra-virgin olive oil, or more depending on the number of potatoes
1 tsp kosher salt
Preparation
Prep the Potatoes
Preheat oven to 300°F
Create steam holes with a fork by poking each potato about 3 times
Rub each potato with olive oil, enough to make the slippery
Sprinkle each potato with kosher salt
Bake the Potatoes
Place potatoes directly on the oven rack and bake for 1 hour
Remove the potatoes and apply another light coating of olive oil to the potatoes
Crisp the Skin
Increase heat to 400°F
Place potatoes back into the oven and bake for 10 minutes or until potato skins are browned and crispy
Serve with your favorite toppings such as sour cream and chives or keep it simple with a pat of butter, an extra sprinkle of sea salt and freshly cracked black pepper.
These are also great the next day chopped and sauteed with onions for a delicious breakfast hash. Serve with eggs, hot sauce and sprinkle with fresh herbs! Yum!
Pro Tip: For the fluffiest result, insert a fork into the top of the baked potato a few times then squeeze the potato open with both hands rather than slice open with a knife.
