Tahini, a seed butter made from sesame seeds, is blended with lemon juice, water, za'atar and a pinch of salt for an earthy tangy dressing. Perfect as a creamy dressing for salads or as a dip for veggie spears and pita wedges! Quick, fresh, nutritious and delicious!
1/2 cup tahini
1 tbsp lemon juice, freshly squeezed
1 tbsp water
1/8 tsp za'atar (or use a combination of sesame seeds and dried oregano along with sumac, if available)
1/8 tsp lemon zest (optional)
Pinch of sea salt
Whisk tahini with lemon juice
Add water and whisk until well combined (add more water as needed to reach desired consistency. See pro tip below)
Add za'atar, lemon zest (if using) and salt. Whisk and taste. Adjust seasoning as needed
Pro tip: Control the consistency by adjusting the amount of water. Use less water for a thicker consistency if serving as a dip.
Serve with your favorite salad greens or as a dip with cucumber spears and toasted pita wedges.
