What makes this dressing special? The tang of a freshly squeezed lemon combined with a hint of sweetness from the agave! Add dijon mustard and extra-virgin olive oil and you have a perfectly balanced and creamy dressing. Goes great with any leafy green salad, shredded cabbage or roasted vegetable salad.
Pro tip: After mixing the lemon, dijon and agave, slowly drizzle the extra-virgin olive oil along the side of the bowl while whisking to emulsify.
1 tbsp Agave
1 tbsp Dijon Mustard
1/2 tbsp Lemon juice
1 tbsp extra-virgin olive oil
Salt and pepper to taste
Whisk all ingredients together in a small bowl
Taste and adjust salt and pepper, as needed
Dijon mustard is not a significant source of vitamins and minerals but does contain some potassium, calcium and iron. And, as part of the mustard family, contains antioxidants known as glucosinolates, which have been shown to help reduce inflammation.
Extra-virgin olive oil is a good source of healthy fats, predominantly monounsaturated fatty acids (MUFAs) which are also known to support heart health.
Freshly squeezed lemon juice delivers a healthy dose of vitamin C.
