If you find you have too many avocados, go guacamole! This is an expedited version of the traditional recipe. Normally, I would add Jalapeno but I didn't have those on hand and needed a quick and satisfying appetizer for guests. If you find yourself in a pinch, give this one a try.
Time saving tip: Jalapenos are delicious in guacamole, but, this recipe uses dried cayenne pepper instead. It saves prep time and still brings the heat.
Ingredients
For the Dressing
2 tbsp lime juice (or more if needed)
1 tbsp extra-virgin olive oil
1/8 tsp Cayenne pepper (or to taste)
2 ripe avocadoes, cored and scooped out of their shells
1/4 cup cilantro, finely chopped
1/4 cup red onion, diced
Sea Salt to taste (start with a pinch, stir, taste and adjust from there)
Preparation
Add Red Onion and Herbs to the bowl
Pro tip: If guacamole is on rotation at your house, invest in a Molcajete! I've been using mine for over 15 years and it is the perfect size and grit for making and serving guacamole.
If you don't have a Molcajete, a mortar and pestle will work if it is big enough. You can also use a mixing bowl with the back of a fork to mash the ingredients together.
Add Avocado to bowl
Cut each avocado in half lengthwise
Remove the core
Scoop out the avocado with a spoon
Add directly to the mixing bowl
Add Remaining Ingredients
Sprinkle Cayenne pepper over avocado
Pour in the extra-virgin olive oil
Add the lime juice
Add a pinch of Sea Salt
Mash the Ingredients together
Combine all ingredients with a mashing motion until dip blends together but still retains some chunkiness
When well combined, taste and adjust seasoning
Add more lime juice if the consistency is too thick
Let Guacamole sit at room temperature for 30 minutes, if you have the time, before serving to allow flavors to meld.
