Cucumbers, garlic and mint transform plain Greek yogurt into a refreshing and versatile dish. Perfect as a summer appetizer and just as delicious with stews and roasts in the fall and winter, too!
1 large cucumber, seeds removed and cut into quarters
2 cups plain Greek yogurt
6 - 8 fresh mint leaves, chopped
1 tsp garlic, minced
1 tsp lemon zest
1 tbsp extra-virgin olive oil
A couple pinches of kosher salt
Scoop out the cucumber seeds and discard
Evenly sprinkle each cucumber portion with a pinch of salt across both sides of the cucumber
Wrap the salted cucumbers in paper towels to absorb excess moisture
Set aside for 30 minutes
While Cucumbers are dehydrating, prep and combine the other ingredients
In a medium bowl, add yogurt, mint, garlic, lemon zest, olive oil and a pinch of salt
Wipe the cucumbers dry and chop into small pieces
Add chopped cucumber to the yogurt and mix well to incorporate all the flavors
Taste and add another pinch of kosher salt, if needed
The yogurt can be served immediately or stored in an air tight container in the refrigerator for up to 2 days. Some separation may occur, depending on how much water was still in the cucumbers, so give it a good stir before serving. Add a mint sprig for color and a drizzle of olive oil for extra flavor.
Serve with pita wedges, crusty French baguette, sliced pears, peaches or apples and fresh veggies.
