This protein-packed dip is fast to prepare and even faster to disappear! The combination of cheeses with the olive, pepper and parsley topping transforms this into a flavor sensation. Serve with celery sticks or french bread toasted with olive oil and a pinch of salt. Delish!
For the dip
3 tbsp Cottage Cheese (I use 4% fat here, but, you can cut down the amount of fat in the dip by using either 2% or nonfat options)
3 tbsp Feta Cheese, roughly crumbled
2 tbsps extra-virgin olive oil
1-2 tbsps water, if needed
For the topping
2 tbsp chopped black olives
1 tbsp chopped mini bell yellow pepper
1/2 tbsp chopped fresh parsley
1tsp extra-virgin olive oil
Combine cottage cheese, Feta and olive oil in a blender and puree until smooth, use a spatula to scrape the sides to incorporate
Add the water a little at a time if the mixture is too thick
In a small bowl, combine the olives, peppers and parsley and mix well
In a serving bowl, add the cheese dip then top with the olive and pepper mixture.
Drizzle the remaining olive oil over the top
Both Cottage Cheese and Feta are excellent sources of protein, calcium, phosphorus and probiotics which support bone and gut health and can help manage blood sugar. However, Feta is also high in saturated fat and sodium. In this recipe, the amount of Feta is cut in half by using equal parts cottage cheese and Feta. This dip delivers full Feta taste with less saturated fat and sodium.
