Chimichurri is a delicious Argentinian sauce that combines herbs with citrus, garlic, red pepper flakes and olive oil. 3 tbsps lime juice, freshly squeezed
2 tbsps extra-virgin olive oil
2 tbsps chopped fresh flat-leaf parsley
1 tbsps chopped fresh oregano
1 tbsps chopped fresh cilantro
2 garlic cloves, minced
1 tsp red pepper flakes (optional)
1/2 tsp kosher salt
1/4 tsp ground black pepper
Time saving tip: Rather than chop each of the herbs and garlic individually, add them to a food processor and pulse on high speed for a few seconds
Combine the herbs, garlic, red pepper flakes (if using), salt and pepper in a small bowl
Nutrition tip: if avoiding raw garlic or excluding FODMAP foods from the diet, exclude garlic from the sauce and try swapping the extra-virgin olive oil for a garlic-infused oil or amp up the spice with additional red pepper flakes.
Add the lime juice and mix to incorporate
Whisk in the olive oil
Season to taste with salt and pepper, if needed
