Need an appetizer in a pinch? This protein-packed dip takes plain Greek yogurt and amplifies the flavor intensity by blooming the spices. Crushed pistachios add crunch and lemon zest adds brightness. Top with a pinch of salt, freshly cracked black pepper. Serve with cucumber spears and toasted pita. So good!
For the dip
3 tbsp plain Greek yogurt
2 tsp extra-virgin olive oil
1/4 tsp Za'atar (or use a combination of sesame seeds and dried oregano along with sumac, if available)
1/8 tsp dried cayenne pepper (or substitute with any red chili spice and adjust to your taste preference)
1/4 cup roughly chopped pistachios
1/2 tsp lemon zest
Sea salt and freshly cracked black pepper, to taste
Heat olive oil in a small skillet over medium heat
Add Za'atar (or preferred combination of spices) and chili to the oil and toast the spices until fragrant (approximately 1 minute)
Remove from heat and set aside
Add yogurt to a small bowl (this step can be done right in the serving bowl to cut down on cleanup)
Pour the bloomed spices and oil over the yogurt
Top with crushed pistachios, lemon zest, a pinch of sea salt and black pepper
Store any extra bloomed spice yogurt refrigerated in an air tight container for up to 3 days.
